- 8 oz tomato sauce
- minced garlic
- dry oregano
- dry basil
- fresh basil (including 5 lg. equal sized leaves)
- 1/2 lb grated mozarella
- 1/4 cup grated cheddar
- 1/4 cup goats cheese
- 1 lb large shrimp
- 1 cup shitake mushrooms
- 1 Italian bread pizza shell (like Bobali)
- salt and pepper
- olive oil
- 1 tsp soy sauce
In sauce pan, simmer tomato sauce with salt, pepper, garlic, dry basil, and oregano. Simmer and season to taste.
Preheat oven to 350o
In skillet, sauteé shrimp (remove tails first), mushrooms, oil, 1 tsp. soy sauce, and about 2tbsp. of garlic. Sauteé until shrimp is cooked and mushrooms are tender.
Set crust on a cookie sheet. Spread sauce on crust by ladelling into center. Then with a ladel or rubber spatula, spread from center spiralling outwards (in deosil circle, of course).
Spread mozarella and cheddar mixture over sauce.
Lay 5 large basil leaves on crust to form a pentacle. Between the basil leaves, pile the shrimp, mushrooms and garlic mixture.
Crumble goats cheese over everything. Now top with a light sprinkling of dried basil.
Bake at 350oF until cheese melts and crust browns (about 15 minutes).
Properties:
Garlic and basil are very protective. The sign of the pentacle is traditionally for protection. Tomatoes and shrimp add delicious zest. The bread crust forms a good, strong, foundation to begin with. Cheese brings joy and health.
